The Baja Salad at Wendy's is an updated version of the taco salad. It features fresh pico de gallo, guacamole. slow simmered chili, cheddar and pepper jack cheeses, all topped with a red jalapeno dressing. They present you with a salad and a cup of chili, and it rests upon the eater to add as much or as little chili as he wants.
Creamy Red Jalapeno Dressing
Makes about 22 tablespoons
1 cup light sour cream
2 cloves garlic, minced
1 Red Jalapeño pepper, stemmed, seeded, and minced
3 tablespoons cilantro, chopped (no stems)
1/2 teaspoon ground cumin
Sea salt and freshly ground pepper to taste
Combine all ingredients and refrigerate for several hours before serving to blend flavors.
